From Vero Beach down to Palm City, local food enthusiasts have a wave of fresh dining options to explore. Whether you are craving Southern comfort food, innovative fusion concepts, or award-winning waterfront cocktails, the immediate Indian River County area and the wider Treasure Coast are buzzing with new openings, highly anticipated arrivals, and seasonal restaurant shifts.

The Treasure Coast dining scene is expanding rapidly this summer, marked by the arrival of specialized culinary concepts, the expansion of beloved local food trucks into brick-and-mortar spaces, and significant national recognition for regional establishments.

Newly Opened Dining Destinations

Food lovers in Vero Beach can now enjoy a unique outdoor dining experience with the opening of a brand-new Southern comfort barbecue spot. Operating exclusively outdoors with a convenient walk-up window, this new eatery is serving up traditional favorites. Patrons can indulge in hearty staples like biscuits and gravy, country-fried steak, savory grits, and fried green tomatoes, all washed down with classic sweet tea.

Further south, a beloved family-owned chicken wing establishment, celebrated for its 27-year history and ties to an NFL player, has officially expanded. The new location features a dedicated pickup counter, limited seating, and extended hours to satisfy late-night cravings. Additionally, Fort Pierce residents recently welcomed the city’s second location of the popular Mexican grill chain, complete with a convenient drive-thru lane.

Highly Anticipated Arrivals on the Treasure Coast

The region is also preparing for a diverse array of upcoming restaurant openings over the next few months. Local diners can look forward to:

  • Wood-Fired Rotisserie Chicken: A Palm Beach-based chicken chain is expanding to Stuart and Martin County this year, bringing its signature house-made marinade and Brazilian oakwood-roasted chicken.
  • Beach-Vibe Tacos: A casual Palm Beach County taco and tequila shop is bringing Mexican street-style food, fresh juices, and cocktails to Palm City within the next two months.
  • Mexiterranean Fusion: Tradition and Port St. Lucie will soon host a unique Mexican-Mediterranean fusion concept. Diners can expect a menu featuring flatbreads, al pastor meat, and a blend of Mexican and Spanish cheeses. The establishment will serve lunch, dinner, and weekend brunch, while boasting the county’s most affordable wines imported from Europe and South America.
  • Gourmet Hot Dogs: A popular hot dog truck, which has operated for six years under the guidance of an owner whose life was deeply impacted by cancer and the pandemic, is opening its first physical restaurant in Port St. Lucie. The menu will feature 100 percent beef hot dogs and creative made-to-order options, including a unique ahi tuna dog paired with dragon fruit.
  • Specialty Coffee: A mobile coffee truck founded by a former law enforcement officer is transitioning to a permanent Fort Pierce shop this summer, offering specialty drinks like limited-batch caramelized banana lattes made with homemade syrups.

In addition to these new flavors, a local café is adjusting its menu in response to changing federal regulations. A former bar is currently expanding to include a café with extended hours, but will be eliminating its signature hemp-based THC drinks ahead of a federal ban taking effect in mid-November.

Renovations, Rebrandings, and National Acclaim

While some businesses are just getting started, established local venues are undergoing significant updates. In Vero Beach, a fine dining restaurant known for its live jazz is slated to reopen on August 1 following extensive renovations. The upgrades are designed to enhance the romantic atmosphere, featuring a 70-seat dining room outfitted with privacy curtains, a VIP dining alcove, and dark wood floors designed to absorb sound for a more intimate dining experience.

In Fort Pierce, a well-known restaurant and bourbon bar has been acquired by a new Sicilian owner. The transition will introduce a complete remodel, a new name, and a revamped menu with an Italian twist. The culinary focus will shift toward daily fresh-caught fish, locally sourced meats, and an expanded selection of pasta dishes.

Meanwhile, the Treasure Coast is making waves on a national level. An iconic Sebastian tiki bar, celebrated for its breathtaking views of the Indian River Lagoon, has been honored in a prominent USA TODAY list. The venue was named one of the nation’s 38 best bars to visit, nominated by food writers across the country who praised it as a destination they would return to time and time again.

As the season progresses, a few local spots are taking a brief hiatus. Three restaurants operating under the same ownership have temporarily closed for the summer season, though two of their sister establishments in the very same plaza remain open to serve the community.
